Roasted Eggplant Salad with Yogurt Dressing

When you feel like a salad but would like to have something warm in the cold weather, a roasted eggplant salad is the perfect meal that is light and toasty at the same time.

  1. 2 Eggplants (Long or Egg Shaped)
  2. 1 Cucumber (Long)
  3. 1 Lemon
  4. 1 Punnett Cherry Tomatoes
  5. 1 Bag of Rocket (arugula) or other greens
  6. 1 bulb of garlic. Minced Garlic is suitable as well

  1. 1 tub of your preferred yogurt
  2. Grapeseed or other neutral oil
  3. Salt & Pepper for Seasoning (recommend Kosher Salt)
  4. Cumin seeds or ground cumin
  5. Balsamic vinegar
  6. Flaky Sea Salt to Garnish
  7. 1 Bottle Extra Virgin Olive Oil for Garnish

  • Oven (If you don’t have one, pan fry/BBQ is just as suitable)
  • 1 large Sheet Pan
  • Parchment/baking paper to cover pan
  • 2 Medium Bowls for mixing
  • Measuring cups & spoons
  • Best served on a platter
